- Jasmine rice - 100 grams
- Water - 1 liter
- Carrot - 1 medium, diced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Spinach - 50 grams, chopped
- Ginger - 1 tablespoon, minced
- Garlic - 1 clove, minced
- Vegetable broth powder - 1 teaspoon
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2, chopped
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then drain.
- In a large pot, combine the rinsed rice and 1 liter of water. Bring to a boil over high heat.
- Once boiling, reduce the heat to low and let it simmer, stirring occasionally, for about 20 minutes or until the rice is soft and the mixture has thickened to a porridge consistency.
- In a separate pan, heat the sesame oil over medium heat. Add minced ginger and garlic, sautéing until fragrant, about 1 minute.
- Add the diced carrot and sliced mushrooms to the pan, cooking for an additional 5 minutes, or until the vegetables are tender.
- Stir in the chopped spinach, vegetable broth powder, and soy sauce, cooking for another 2-3 minutes until the spinach wilts.
- Once the rice porridge is ready, serve it in bowls topped with the sautéed vegetables.
- Garnish with chopped green onions and fresh cilantro, and serve with lime wedges on the side.
