Ingredients

  • Jasmine rice - 100 grams
  • Water - 1 liter
  • Carrot - 1 medium, diced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Spinach - 50 grams, chopped
  • Ginger - 1 tablespoon, minced
  • Garlic - 1 clove, minced
  • Vegetable broth powder - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Green onions - 2, chopped
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a large pot, combine the rinsed rice and 1 liter of water. Bring to a boil over high heat.
  3. Once boiling, reduce the heat to low and let it simmer, stirring occasionally, for about 20 minutes or until the rice is soft and the mixture has thickened to a porridge consistency.
  4. In a separate pan, heat the sesame oil over medium heat. Add minced ginger and garlic, sautéing until fragrant, about 1 minute.
  5. Add the diced carrot and sliced mushrooms to the pan, cooking for an additional 5 minutes, or until the vegetables are tender.
  6. Stir in the chopped spinach, vegetable broth powder, and soy sauce, cooking for another 2-3 minutes until the spinach wilts.
  7. Once the rice porridge is ready, serve it in bowls topped with the sautéed vegetables.
  8. Garnish with chopped green onions and fresh cilantro, and serve with lime wedges on the side.
