Ingredients
- Glutinous rice - 100 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Water - 500 ml
- Mango - 1 medium, diced
- Jackfruit - 100 grams, sliced
- Pandan leaves - 2 leaves, tied in a knot
- Salt - a pinch
Steps
- Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 2 hours.
- In a pot, bring 500 ml of water to a boil and add the soaked glutinous rice. Cook for 20 minutes, stirring occasionally, until the rice is tender.
- Once cooked, drain the rice and return it to the pot. Add the coconut milk, sugar, and a pinch of salt. Stir well and cook over low heat for another 10 minutes, allowing the flavors to combine.
- While the rice is cooking, prepare the fruits by dicing the mango and slicing the jackfruit.
- Remove the pot from heat and let it cool slightly. Serve the warm coconut rice in bowls, topped with fresh mango and jackfruit pieces.
- Garnish with a few fresh pandan leaves for aroma and serve immediately.
