Ingredients

  • Glutinous rice - 100 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Water - 500 ml
  • Mango - 1 medium, diced
  • Jackfruit - 100 grams, sliced
  • Pandan leaves - 2 leaves, tied in a knot
  • Salt - a pinch

Steps

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 2 hours.
  2. In a pot, bring 500 ml of water to a boil and add the soaked glutinous rice. Cook for 20 minutes, stirring occasionally, until the rice is tender.
  3. Once cooked, drain the rice and return it to the pot. Add the coconut milk, sugar, and a pinch of salt. Stir well and cook over low heat for another 10 minutes, allowing the flavors to combine.
  4. While the rice is cooking, prepare the fruits by dicing the mango and slicing the jackfruit.
  5. Remove the pot from heat and let it cool slightly. Serve the warm coconut rice in bowls, topped with fresh mango and jackfruit pieces.
  6. Garnish with a few fresh pandan leaves for aroma and serve immediately.
