Ingredients
- Glutinous rice (purple) - 100 grams
- Red beans (dried) - 50 grams
- Coconut milk - 200 milliliters
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Water - 400 milliliters
- Pandan leaves (optional) - 1-2 leaves
Steps
- Rinse the glutinous rice thoroughly under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
- Rinse the red beans and soak them in water for 1-2 hours. After soaking, drain and place them in a pot with 200 milliliters of water. Boil until tender, about 30-40 minutes, then drain and set aside.
- In a steamer, drain the soaked glutinous rice and place it in a cloth or a steaming basket. If using, tie the pandan leaves into a knot and place them on top of the rice for aroma. Steam the rice for about 30 minutes until fully cooked.
- In a saucepan, combine the coconut milk, sugar, and salt. Heat gently, stirring until the sugar dissolves, then remove from heat.
- Once the rice is cooked, combine it with the cooked red beans in a bowl. Pour half of the sweetened coconut milk over the mixture, stirring gently to combine.
- Serve the mixture in bowls, drizzling the remaining coconut milk on top. You can also add a pinch of salt or more sugar to taste if desired.
