Ingredients

  • Glutinous rice (purple) - 100 grams
  • Red beans (dried) - 50 grams
  • Coconut milk - 200 milliliters
  • Sugar - 50 grams
  • Salt - 1/4 teaspoon
  • Water - 400 milliliters
  • Pandan leaves (optional) - 1-2 leaves

Steps

  1. Rinse the glutinous rice thoroughly under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Rinse the red beans and soak them in water for 1-2 hours. After soaking, drain and place them in a pot with 200 milliliters of water. Boil until tender, about 30-40 minutes, then drain and set aside.
  3. In a steamer, drain the soaked glutinous rice and place it in a cloth or a steaming basket. If using, tie the pandan leaves into a knot and place them on top of the rice for aroma. Steam the rice for about 30 minutes until fully cooked.
  4. In a saucepan, combine the coconut milk, sugar, and salt. Heat gently, stirring until the sugar dissolves, then remove from heat.
  5. Once the rice is cooked, combine it with the cooked red beans in a bowl. Pour half of the sweetened coconut milk over the mixture, stirring gently to combine.
  6. Serve the mixture in bowls, drizzling the remaining coconut milk on top. You can also add a pinch of salt or more sugar to taste if desired.
