Ingredients
- Mung beans (split) - 100g
- Coconut milk - 200ml
- Water - 500ml
- Tapioca pearls - 50g
- Sugar - 50g
- Salt - a pinch
- Pandan leaves - 2 pieces (optional for aroma)
Steps
- Rinse the mung beans under cold water until the water runs clear, then soak them in water for at least 2 hours or overnight.
- In a pot, bring 500ml of water to a boil. Add the soaked mung beans and cook for about 15-20 minutes until they are soft. Drain and set aside.
- In the same pot, bring another 250ml of water to a boil and add the tapioca pearls. Cook for about 10-15 minutes until they become translucent, stirring occasionally to prevent sticking. Drain and rinse under cold water.
- In a separate saucepan, combine the cooked mung beans, coconut milk, sugar, and a pinch of salt. If using pandan leaves, tie them in a knot and add them for flavor. Simmer the mixture on low heat for about 10 minutes, stirring occasionally.
- Remove the pandan leaves if used. In serving bowls, add a portion of the cooked tapioca pearls, then ladle the mung bean and coconut mixture over the top.
- Serve warm or chilled as desired, and enjoy your Chè Nước Dừa!
