Steps

  1. Rinse the mung beans under cold water until the water runs clear, then soak them for at least 2 hours or overnight.
  2. In a pot, bring 500 ml of water to a boil, add the soaked mung beans, and cook for about 15 minutes until they are tender. Drain any excess water.
  3. In a separate pot, bring 400 ml of coconut milk to a gentle simmer. Add the cooked mung beans, sugar, and a pinch of salt. Stir well and cook for an additional 5 minutes.
  4. In another pot, cook the tapioca pearls in boiling water according to the package instructions (usually about 10-15 minutes) until they become translucent. Drain and rinse them under cold water.
  5. Add the cooked tapioca pearls to the coconut milk mixture and stir in the vanilla extract.
  6. Serve warm or chilled in bowls, garnishing with additional coconut milk if desired.
