Steps
- Rinse the mung beans under cold water until the water runs clear, then soak them for at least 2 hours or overnight.
- In a pot, bring 500 ml of water to a boil, add the soaked mung beans, and cook for about 15 minutes until they are tender. Drain any excess water.
- In a separate pot, bring 400 ml of coconut milk to a gentle simmer. Add the cooked mung beans, sugar, and a pinch of salt. Stir well and cook for an additional 5 minutes.
- In another pot, cook the tapioca pearls in boiling water according to the package instructions (usually about 10-15 minutes) until they become translucent. Drain and rinse them under cold water.
- Add the cooked tapioca pearls to the coconut milk mixture and stir in the vanilla extract.
- Serve warm or chilled in bowls, garnishing with additional coconut milk if desired.
