Ingredients

  • Squid (cleaned and minced) - 300 grams
  • Shallots (finely chopped) - 2 tablespoons
  • Garlic (minced) - 1 tablespoon
  • Black pepper - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Fish sauce (halal) - 1 tablespoon
  • Rice flour - 3 tablespoons
  • Cornstarch - 2 tablespoons
  • Fresh cilantro (chopped) - 2 tablespoons
  • Vegetable oil (for frying) - 200 ml

Steps

  1. In a large mixing bowl, combine minced squid, shallots, garlic, black pepper, salt, sugar, fish sauce, rice flour, cornstarch, and chopped cilantro.
  2. Mix all ingredients thoroughly until they form a sticky mixture.
  3. With wet hands, shape the mixture into small patties, about 5 cm in diameter.
  4. Heat vegetable oil in a frying pan over medium heat until hot.
  5. Carefully place the patties into the hot oil, frying in batches to avoid overcrowding.
  6. Fry each side for about 3-4 minutes or until golden brown and crispy.
  7. Remove the patties from the oil and let them drain on paper towels.
  8. Serve hot with dipping sauce or fresh vegetables.
