- Firm tofu - 200 grams
- Shiitake mushrooms - 100 grams, chopped
- Mushroom soy sauce - 2 tablespoons
- Cornstarch - 2 tablespoons
- Tapioca starch - 1 tablespoon
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Black pepper - 1 teaspoon
- Five-spice powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Vegetable oil - 1 tablespoon
- Banana leaves - for wrapping (optional)
Steps
- In a mixing bowl, crumble the firm tofu and add the chopped shiitake mushrooms.
- Mix in the mushroom soy sauce, cornstarch, tapioca starch, minced garlic, chopped shallots, black pepper, five-spice powder, and salt until well combined.
- Transfer the mixture to a food processor and blend until smooth, scraping down the sides as needed.
- If using banana leaves, cut them into rectangular pieces, briefly steaming or softening them over an open flame to make them pliable.
- Place the tofu mixture onto the banana leaves (or in a small loaf pan if not using leaves) and shape it into a log, wrapping tightly.
- Secure the ends with kitchen twine or tie with additional banana leaves.
- Steam the wrapped mixture in a steamer for 30 minutes, allowing it to firm up.
- Once cooked, remove from the steamer and let cool for a few minutes before unwrapping.
- Slice into pieces and serve warm with fresh herbs and dipping sauce.
