Ingredients
- Taro - 200 grams, peeled and diced
- Coconut milk - 400 ml
- Tapioca pearls - 50 grams
- Sugar - 50 grams
- Salt - 1/4 teaspoon
- Water - 500 ml
Steps
- In a saucepan, bring 500 ml of water to a boil. Add the diced taro and cook until tender, about 15 minutes.
- While the taro is cooking, in another pot, bring 2 cups (500 ml) of water to a boil and add the tapioca pearls. Cook for about 10-15 minutes until they become translucent. Stir occasionally to prevent sticking.
- Once the tapioca pearls are cooked, drain and rinse them under cold water. Set aside.
- When the taro is tender, mash half of it with a fork or potato masher, leaving the other half diced for texture.
- In the saucepan with the cooked taro, add the coconut milk, sugar, and salt. Stir well to combine and bring to a gentle simmer for about 5 minutes.
- Add the cooked tapioca pearls to the taro and coconut mixture, stirring to combine well. Simmer for an additional 5 minutes.
- Remove from heat and let it cool slightly before serving. Enjoy warm or chilled.
