- Agar-agar powder - 5 grams
- Water - 250 ml
- Almond extract - 1 teaspoon
- Coconut milk - 200 ml
- Sugar - 30 grams
- Fresh lychee (peeled and pitted) - 100 grams
- Mango (diced) - 100 grams
- Ice cubes - as needed
- Salt - a pinch
Steps
- In a saucepan, combine 250 ml of water and 5 grams of agar-agar powder. Stir well and bring to a boil over medium heat.
- Once boiling, reduce heat and simmer for 2 minutes, stirring constantly until the agar-agar is completely dissolved.
- Add 1 teaspoon of almond extract and a pinch of salt to the mixture, then pour it into a shallow dish. Let it cool at room temperature for about 15 minutes until it sets.
- While the agar-agar mixture is cooling, prepare the coconut milk sauce by whisking together 200 ml of coconut milk and 30 grams of sugar in a separate bowl until the sugar is fully dissolved. Set aside.
- Once the agar-agar has set, cut it into small cubes using a sharp knife.
- In serving bowls, place the agar-agar cubes, then add the fresh lychee and diced mango on top.
- Pour the coconut milk sauce over the fruit and agar-agar, and add ice cubes if desired for a refreshing touch.
