Ingredients

  • Shrimp, peeled and deveined - 200 grams
  • Rice vermicelli noodles - 50 grams
  • Carrot, julienned - 1 medium
  • Mushrooms, finely chopped (shiitake or wood ear) - 50 grams
  • Garlic, minced - 2 cloves
  • Green onion, finely chopped - 2 stalks
  • Fish sauce - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Rice paper wrappers - 10 sheets
  • Canola oil, for frying - 500 ml

Steps

  1. Soak the rice vermicelli noodles in warm water for about 15 minutes or until soft, then drain and set aside.
  2. In a mixing bowl, combine the shrimp, softened noodles, carrot, mushrooms, garlic, green onion, fish sauce, soy sauce, and black pepper. Mix well until all ingredients are evenly combined.
  3. Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes pliable, then lay it flat on a clean surface.
  4. Place about 2 tablespoons of the filling mixture near the bottom edge of the rice paper wrapper. Fold the sides over the filling and roll it up tightly from the bottom to the top, sealing the edges as you go. Repeat with remaining wrappers and filling.
  5. In a large skillet or deep frying pan, heat the canola oil over medium-high heat. Once the oil is hot, carefully add the spring rolls in batches, frying until they are golden brown and crispy, about 3-4 minutes per side.
  6. Remove the spring rolls from the oil and drain on a paper towel-lined plate. Serve hot with a side of dipping sauce, such as nuoc cham or soy sauce.
