- Pizza dough - 200 grams
- Rice paper sheets - 4 sheets
- Tofu (firm) - 150 grams, crumbled
- Carrot - 50 grams, julienned
- Mushrooms (shiitake or button) - 50 grams, sliced
- Bell pepper (red or yellow) - 50 grams, sliced
- Green onions - 2, chopped
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Cilantro - a handful, chopped
- Olive oil - for brushing
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 220°C (428°F).
- In a bowl, mix the crumbled tofu, julienned carrot, sliced mushrooms, bell pepper, green onions, minced garlic, soy sauce, sesame oil, chopped cilantro, salt, and black pepper until well combined.
- Soak the rice paper sheets in warm water for about 15 seconds until pliable, then lay them flat on a clean surface.
- Place a spoonful of the vegetable-tofu mixture in the center of each rice paper sheet, fold the sides over, and roll tightly to form a spring roll. Repeat for all sheets.
- Brush a baking tray with olive oil and place the spring rolls on the tray. Bake for 20 minutes or until golden and crispy, turning halfway through.
- Meanwhile, roll out the pizza dough on a floured surface to your desired thickness and shape.
- Transfer the rolled dough onto a pizza stone or baking tray lined with parchment paper. Brush the surface lightly with olive oil.
- Once the spring rolls are baked, remove them from the oven and place them on top of the pizza dough.
- Bake the pizza in the oven for an additional 10-15 minutes until the dough is cooked through and slightly crispy.
- Remove from the oven, slice, and serve hot.
