Ingredients

  • Pizza dough - 200 grams
  • Rice paper sheets - 4 sheets
  • Tofu (firm) - 150 grams, crumbled
  • Carrot - 50 grams, julienned
  • Mushrooms (shiitake or button) - 50 grams, sliced
  • Bell pepper (red or yellow) - 50 grams, sliced
  • Green onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Cilantro - a handful, chopped
  • Olive oil - for brushing
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 220°C (428°F).
  2. In a bowl, mix the crumbled tofu, julienned carrot, sliced mushrooms, bell pepper, green onions, minced garlic, soy sauce, sesame oil, chopped cilantro, salt, and black pepper until well combined.
  3. Soak the rice paper sheets in warm water for about 15 seconds until pliable, then lay them flat on a clean surface.
  4. Place a spoonful of the vegetable-tofu mixture in the center of each rice paper sheet, fold the sides over, and roll tightly to form a spring roll. Repeat for all sheets.
  5. Brush a baking tray with olive oil and place the spring rolls on the tray. Bake for 20 minutes or until golden and crispy, turning halfway through.
  6. Meanwhile, roll out the pizza dough on a floured surface to your desired thickness and shape.
  7. Transfer the rolled dough onto a pizza stone or baking tray lined with parchment paper. Brush the surface lightly with olive oil.
  8. Once the spring rolls are baked, remove them from the oven and place them on top of the pizza dough.
  9. Bake the pizza in the oven for an additional 10-15 minutes until the dough is cooked through and slightly crispy.
  10. Remove from the oven, slice, and serve hot.
