Ingredients

  • Ground pork - 250 grams
  • Shiitake mushrooms (dried) - 30 grams
  • Carrot (finely grated) - 50 grams
  • Green onion (chopped) - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Fish sauce - 1 tablespoon
  • Oyster sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Lettuce leaves (for wrapping) - 8 large leaves
  • Cilantro (for garnish) - 2 tablespoons
  • Lime wedges (for serving) - 2 wedges

Steps

  1. Soak the dried shiitake mushrooms in warm water for about 15 minutes or until softened, then chop finely.
  2. In a mixing bowl, combine the ground pork, chopped shiitake mushrooms, grated carrot, chopped green onion, minced garlic, fish sauce, oyster sauce, and black pepper. Mix thoroughly until well combined.
  3. Form the mixture into small logs, about 5 cm long and 2 cm wide.
  4. Heat a non-stick skillet over medium heat and add a bit of oil. Cook the pork logs for about 5-6 minutes on each side until golden brown and cooked through.
  5. Once cooked, remove the logs from the skillet and let them cool slightly.
  6. To serve, place a pork log in the center of a lettuce leaf, add a few cilantro leaves, and wrap tightly. Repeat with remaining logs.
  7. Serve with lime wedges on the side for squeezing over the wraps.
