Ingredients
- Ground pork - 200 grams
- Shiitake mushrooms (dried) - 30 grams
- Bean sprouts - 50 grams
- Green onions - 2 stalks
- Garlic - 2 cloves
- Fish sauce - 1 tablespoon
- Coconut flour - 2 tablespoons
- Egg - 1 large
- Pork rinds (crushed) - 50 grams
- Black pepper - 1/2 teaspoon
- Lettuce leaves - 4 large
- Cooking oil (for frying) - 200 ml
Steps
- Soak the dried shiitake mushrooms in warm water for 15 minutes, then drain and finely chop.
- In a mixing bowl, combine the ground pork, chopped mushrooms, bean sprouts, chopped green onions, minced garlic, fish sauce, coconut flour, egg, and black pepper. Mix well until all ingredients are fully incorporated.
- Take a large lettuce leaf and place a spoonful of the filling mixture at one end. Roll it up tightly, folding in the sides to enclose the filling, and secure with a toothpick if necessary. Repeat with the remaining leaves and filling.
- Heat the cooking oil in a frying pan over medium heat. Once hot, gently place the rolls in the oil, frying them until golden brown and crispy, about 3-4 minutes on each side.
- Remove the rolls from the pan and place them on a paper towel to drain excess oil. Serve hot, optionally with a dipping sauce of your choice.
