- Shrimp - 100 grams, peeled and deveined
- Squid - 50 grams, cleaned and diced
- Carrot - 1 medium, grated
- Mushrooms - 50 grams, finely chopped
- Bean sprouts - 50 grams, rinsed
- Rice paper wrappers - 8 sheets
- Garlic - 2 cloves, minced
- Fish sauce - 1 tablespoon
- Black pepper - 1/2 teaspoon
- Fresh coriander - 1 tablespoon, chopped
- Lettuce leaves - for serving
- Cooking oil - for frying
Steps
- In a bowl, combine the shrimp, squid, grated carrot, chopped mushrooms, bean sprouts, minced garlic, fish sauce, black pepper, and coriander. Mix well until all ingredients are evenly distributed.
- Soak one rice paper wrapper in warm water for about 10-15 seconds until soft. Lay it flat on a clean surface.
- Place a spoonful of the seafood mixture in the center of the wrapper, fold in the sides, and roll tightly to seal. Repeat with the remaining wrappers and filling.
- In a frying pan, heat oil over medium heat. Once hot, carefully add the spring rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
- Remove the spring rolls and drain on paper towels. Serve warm with fresh lettuce leaves for wrapping.
