Ingredients

  • Shrimp - 100 grams, peeled and deveined
  • Squid - 50 grams, cleaned and diced
  • Carrot - 1 medium, grated
  • Mushrooms - 50 grams, finely chopped
  • Bean sprouts - 50 grams, rinsed
  • Rice paper wrappers - 8 sheets
  • Garlic - 2 cloves, minced
  • Fish sauce - 1 tablespoon
  • Black pepper - 1/2 teaspoon
  • Fresh coriander - 1 tablespoon, chopped
  • Lettuce leaves - for serving
  • Cooking oil - for frying

Steps

  1. In a bowl, combine the shrimp, squid, grated carrot, chopped mushrooms, bean sprouts, minced garlic, fish sauce, black pepper, and coriander. Mix well until all ingredients are evenly distributed.
  2. Soak one rice paper wrapper in warm water for about 10-15 seconds until soft. Lay it flat on a clean surface.
  3. Place a spoonful of the seafood mixture in the center of the wrapper, fold in the sides, and roll tightly to seal. Repeat with the remaining wrappers and filling.
  4. In a frying pan, heat oil over medium heat. Once hot, carefully add the spring rolls in batches, frying until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the spring rolls and drain on paper towels. Serve warm with fresh lettuce leaves for wrapping.
