Ingredients

  • Rice paper wrappers - 8 sheets
  • Lean ground chicken - 150 grams

  • Mushrooms (shiitake or button) - 50 grams, finely chopped
  • Bean sprouts - 50 grams
  • Garlic - 1 clove, minced
  • Green onions - 2 stalks, chopped
  • Soy sauce - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Lettuce leaves - for serving
  • Fresh herbs (mint, cilantro) - for serving

Steps

  1. In a mixing bowl, combine the ground chicken, grated carrot, shredded cabbage, chopped mushrooms, bean sprouts, minced garlic, and chopped green onions.
  2. Add soy sauce, fish sauce, and black pepper to the mixture, and mix well until all ingredients are evenly combined.
  3. Soak one rice paper wrapper in warm water for about 10-15 seconds until soft, then lay it flat on a clean surface.
  4. Place about 2 tablespoons of the filling mixture near the bottom edge of the wrapper, fold the sides over the filling, and roll up tightly to form a spring roll.
  5. Repeat this process with the remaining wrappers and filling.
  6. In a large skillet, heat a few tablespoons of olive oil over medium heat.
  7. Fry the spring rolls in batches for about 3-4 minutes on each side or until golden brown and crispy.
  8. Remove from the skillet and drain on paper towels.
  9. Serve the chả giò warm on a platter with lettuce leaves and fresh herbs for wrapping.
