Ingredients
- Tapioca pearls - 50 grams
- Mung beans (split) - 50 grams
- Coconut milk - 200 ml
- Sugar - 30 grams
- Salt - a pinch
- Water - 500 ml
- Ice cubes - as needed
Steps
- Rinse the mung beans under cold water and soak them in water for at least 2 hours or overnight.
- In a pot, bring 300 ml of water to a boil. Add the soaked mung beans and cook for about 15 minutes or until soft. Drain and set aside.
- In another pot, bring 200 ml of water to a boil, then add the tapioca pearls. Cook for about 10-15 minutes, stirring occasionally until they become translucent. Drain and rinse under cold water.
- In a small saucepan, combine the coconut milk, sugar, and a pinch of salt. Heat gently until the sugar is dissolved, but do not boil.
- In serving bowls, layer the cooked mung beans and tapioca pearls. Pour the sweetened coconut milk over the top. Add ice cubes if desired.
- Serve immediately and enjoy your Chè Dừa Nước!
