- Mung beans (split) - 100 grams
- Coconut milk - 200 ml
- Coconut water - 100 ml
- Pandan leaves - 2 pieces (or 1 tsp pandan extract)
- Sugar - 50 grams
- Salt - a pinch
- Tapioca pearls - 30 grams (optional)
Steps
- Rinse the mung beans thoroughly and soak them in water for at least 2 hours or overnight for best results.
- After soaking, drain the mung beans and place them in a pot with 200 ml of water. Cook over medium heat until tender, about 15-20 minutes.
- While the mung beans are cooking, prepare the pandan leaves by tying them into a knot and adding them to a separate saucepan with coconut milk, coconut water, and sugar. Heat gently until sugar dissolves, then remove from heat.
- Once the mung beans are cooked, drain any excess water and return them to the pot. Add a pinch of salt and stir to combine.
- If using tapioca pearls, cook them in a separate pot according to package instructions until translucent, then drain.
- To serve, place a portion of mung beans at the bottom of a bowl, add tapioca pearls if using, and pour the warm coconut mixture over the top.
- Optionally, garnish with extra coconut milk or fresh fruit before serving.
