Ingredients

  • Ripe bananas - 2 medium
  • Coconut milk - 200 ml
  • Tapioca pearls - 30 grams
  • Sugar - 30 grams (or to taste)
  • Salt - a pinch
  • Water - 500 ml
  • Pandan leaves - 1 (optional, for fragrance)

Steps

  1. In a pot, bring 500 ml of water to a boil. Add the tapioca pearls and cook for about 15 minutes, stirring occasionally until they become translucent.
  2. Once cooked, drain the tapioca pearls and rinse them under cold water to stop the cooking process. Set aside.
  3. In the same pot, combine the coconut milk, sugar, and a pinch of salt. If using, add the pandan leaf for additional flavor.
  4. Bring the coconut milk mixture to a gentle simmer over low heat, stirring occasionally until the sugar dissolves.
  5. Slice the ripe bananas into thick rounds and add them to the coconut milk mixture. Simmer for another 5 minutes until the bananas are tender.
  6. Add the cooked tapioca pearls to the pot and gently stir to combine all ingredients. Cook for an additional 2 minutes.
  7. Remove from heat and let cool slightly. Serve warm or chilled in bowls, garnished with extra coconut milk if desired.
