- Ripe bananas - 2 medium
- Coconut milk - 200 ml
- Tapioca pearls - 30 grams
- Sugar - 30 grams (or to taste)
- Salt - a pinch
- Water - 500 ml
- Pandan leaves - 1 (optional, for fragrance)
Steps
- In a pot, bring 500 ml of water to a boil. Add the tapioca pearls and cook for about 15 minutes, stirring occasionally until they become translucent.
- Once cooked, drain the tapioca pearls and rinse them under cold water to stop the cooking process. Set aside.
- In the same pot, combine the coconut milk, sugar, and a pinch of salt. If using, add the pandan leaf for additional flavor.
- Bring the coconut milk mixture to a gentle simmer over low heat, stirring occasionally until the sugar dissolves.
- Slice the ripe bananas into thick rounds and add them to the coconut milk mixture. Simmer for another 5 minutes until the bananas are tender.
- Add the cooked tapioca pearls to the pot and gently stir to combine all ingredients. Cook for an additional 2 minutes.
- Remove from heat and let cool slightly. Serve warm or chilled in bowls, garnished with extra coconut milk if desired.
