- Mung beans (split) - 100 grams
- Coconut milk - 200 ml
- Water - 500 ml
- Sugar - 50 grams
- Salt - a pinch
- Vanilla extract - 1 teaspoon
- Tapioca pearls - 30 grams
- Roasted peanuts (crushed) - 30 grams
Steps
- Rinse the mung beans under cold water and soak them in water for at least 2 hours or overnight.
- After soaking, drain the mung beans and steam them for about 20 minutes or until they are soft.
- In a separate pot, bring 500 ml of water to a boil. Add the tapioca pearls and cook according to package instructions, usually about 15 minutes until they become translucent. Drain and rinse under cold water to prevent sticking.
- In a saucepan, combine the steamed mung beans, coconut milk, sugar, salt, and vanilla extract. Stir well and heat over low heat for about 5 minutes until heated through and combined.
- To serve, divide the tapioca pearls into two bowls, pour the mung bean and coconut mixture over the top, and sprinkle with crushed roasted peanuts. Serve warm or chilled.
