Ingredients

  • Mung beans (split) - 100 grams
  • Coconut milk - 200 ml
  • Water - 500 ml
  • Sugar - 50 grams
  • Salt - a pinch
  • Vanilla extract - 1 teaspoon
  • Tapioca pearls - 30 grams
  • Roasted peanuts (crushed) - 30 grams

Steps

  1. Rinse the mung beans under cold water and soak them in water for at least 2 hours or overnight.
  2. After soaking, drain the mung beans and steam them for about 20 minutes or until they are soft.
  3. In a separate pot, bring 500 ml of water to a boil. Add the tapioca pearls and cook according to package instructions, usually about 15 minutes until they become translucent. Drain and rinse under cold water to prevent sticking.
  4. In a saucepan, combine the steamed mung beans, coconut milk, sugar, salt, and vanilla extract. Stir well and heat over low heat for about 5 minutes until heated through and combined.
  5. To serve, divide the tapioca pearls into two bowls, pour the mung bean and coconut mixture over the top, and sprinkle with crushed roasted peanuts. Serve warm or chilled.
