  • Lemongrass - 1 stalk, finely chopped
  • Black pepper - 1/2 teaspoon
  • Rice vermicelli noodles - 100 grams
  • Cucumber - 1, sliced
  • Mint leaves - 10 grams
  • Lettuce leaves - 4 large, for wrapping
  • Lime - 1, cut into wedges for serving

Steps

  1. In a bowl, combine turmeric powder, minced garlic, chopped shallots, fish sauce, vegetable oil, chopped dill, finely chopped lemongrass, and black pepper to create a marinade.
  2. Add the fish fillets to the marinade, ensuring they are well coated. Cover and refrigerate for at least 15 minutes.
  3. While the fish is marinating, cook the rice vermicelli noodles according to package instructions, then drain and set aside.
  4. Preheat a grill or grill pan over medium-high heat. Once hot, place the marinated fish fillets on the grill.
  5. Grill the fish for about 4-5 minutes on each side, or until they are cooked through and nicely charred.
  6. To serve, place the grilled fish on a plate with the cooked vermicelli noodles, sliced cucumber, mint leaves, and lettuce leaves.
