Ingredients

  • White fish fillets (e.g. catfish or tilapia) - 300 grams
  • Turmeric powder - 1 teaspoon
  • Salt - 1 teaspoon
  • White pepper - 1/2 teaspoon
  • Garlic, minced - 2 cloves
  • Shallots, thinly sliced - 2 tablespoons
  • Vegetable oil - 2 tablespoons
  • Rice vermicelli noodles - 100 grams
  • Fresh dill - 30 grams
  • Fresh mint leaves - 30 grams
  • Lettuce leaves - 4 large leaves
  • Fish sauce - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Chili, sliced - 1 (optional)

Steps

  1. In a bowl, combine the fish fillets with turmeric powder, salt, white pepper, minced garlic, and half of the sliced shallots. Marinate for at least 15 minutes.
  2. While the fish marinates, cook the rice vermicelli noodles according to package instructions. Drain and set aside.
  3. Heat 1 tablespoon of vegetable oil in a grill pan over medium heat. Grill the marinated fish for about 3-4 minutes on each side or until cooked through.
  4. In the same pan, add the remaining vegetable oil and sauté the remaining shallots until golden brown.
  5. To serve, place the grilled fish on a plate with cooked vermicelli noodles, fresh dill, mint leaves, and lettuce. Drizzle with a mixture of fish sauce and lime juice, and top with sliced chili if desired.
