Ingredients

  • Mung beans - 100 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Water - 500 ml
  • Tapioca starch - 30 grams
  • Pandan leaves - 2
  • Food coloring (green, pink) - as needed
  • Ice cubes - for serving
  • Salt - a pinch

Steps

  1. Rinse the mung beans under cold water, then soak them in water for about 2 hours.
  2. Drain the soaked mung beans and steam them for 20 minutes until soft. Mash them slightly and mix in 25 grams of sugar and a pinch of salt, then set aside.
  3. In a saucepan, bring 300 ml of water to a boil. Add the tapioca starch and stir continuously until the mixture thickens and becomes translucent. Divide the mixture into two bowls.
  4. In one bowl, add a few drops of green food coloring and mix well. In the other bowl, add a few drops of pink food coloring, mixing until fully combined.
  5. Pour the colored tapioca mixtures onto a tray lined with parchment paper, spreading them evenly. Let them cool and set for about 10 minutes, then cut into small squares.
  6. In a separate pot, combine the remaining 200 ml of water, coconut milk, and the remaining 25 grams of sugar. Add the pandan leaves and bring to a gentle simmer for about 5 minutes. Remove the pandan leaves.
  7. To assemble the dessert, layer a spoonful of the mung bean mixture at the bottom of a serving bowl, followed by a layer of the green and pink tapioca squares, and then pour the coconut milk mixture over the top.
  8. Serve chilled with ice cubes for a refreshing treat.
