Ingredients

  • Tapioca flour - 100 grams
  • Warm water - 150 ml
  • Mung beans (split) - 100 grams
  • Sugar - 30 grams
  • Coconut milk - 100 ml
  • Salt - 1/4 teaspoon
  • Banana leaves or parchment paper - for wrapping

Steps

  1. Soak the mung beans in water for at least 2 hours, then drain.
  2. Steam the mung beans for about 20 minutes or until tender, then mash them with 15 grams of sugar and a pinch of salt until smooth.
  3. In a mixing bowl, combine tapioca flour and warm water, kneading until you achieve a smooth dough.
  4. Take a small piece of dough, flatten it in your palm, and place a teaspoon of the mung bean filling in the center.
  5. Fold the dough over the filling and seal it well, shaping it into a ball.
  6. Bring a pot of water to a boil and gently drop the balls into the water. Cook until they float to the surface, about 5-7 minutes.
  7. Remove the balls with a slotted spoon and place them on a plate to cool slightly.
  8. In a small saucepan, combine coconut milk, the remaining sugar, and a pinch of salt, then heat until warm but not boiling.
  9. Serve the tapioca balls in a bowl, drizzled with coconut milk.
