- Tapioca flour - 100 grams
- Warm water - 150 ml
- Mung beans (split) - 100 grams
- Sugar - 30 grams
- Coconut milk - 100 ml
- Salt - 1/4 teaspoon
- Banana leaves or parchment paper - for wrapping
Steps
- Soak the mung beans in water for at least 2 hours, then drain.
- Steam the mung beans for about 20 minutes or until tender, then mash them with 15 grams of sugar and a pinch of salt until smooth.
- In a mixing bowl, combine tapioca flour and warm water, kneading until you achieve a smooth dough.
- Take a small piece of dough, flatten it in your palm, and place a teaspoon of the mung bean filling in the center.
- Fold the dough over the filling and seal it well, shaping it into a ball.
- Bring a pot of water to a boil and gently drop the balls into the water. Cook until they float to the surface, about 5-7 minutes.
- Remove the balls with a slotted spoon and place them on a plate to cool slightly.
- In a small saucepan, combine coconut milk, the remaining sugar, and a pinch of salt, then heat until warm but not boiling.
- Serve the tapioca balls in a bowl, drizzled with coconut milk.
