Ingredients
- Fresh sweet corn - 2 cups (about 2 ears)
- Coconut milk - 400 ml
- Coconut sugar - 100 grams
- Tapioca pearls - 50 grams
- Salt - 1/4 teaspoon
- Water - 2 cups
Steps
- Remove the kernels from the sweet corn and set aside.
- In a saucepan, bring 2 cups of water to a boil and add the tapioca pearls. Cook for about 10 minutes until they become translucent, stirring occasionally.
- Add the sweet corn kernels to the saucepan with the tapioca pearls and continue to cook for another 5 minutes.
- Stir in the coconut milk, coconut sugar, and salt. Mix well and let it simmer for an additional 5-10 minutes until the mixture thickens slightly.
- Remove from heat and let it cool slightly before serving. You can enjoy it warm or chilled.
