Ingredients

  • Fresh sweet corn - 2 cups (about 2 ears)
  • Coconut milk - 400 ml
  • Coconut sugar - 100 grams
  • Tapioca pearls - 50 grams
  • Salt - 1/4 teaspoon
  • Water - 2 cups

Steps

  1. Remove the kernels from the sweet corn and set aside.
  2. In a saucepan, bring 2 cups of water to a boil and add the tapioca pearls. Cook for about 10 minutes until they become translucent, stirring occasionally.
  3. Add the sweet corn kernels to the saucepan with the tapioca pearls and continue to cook for another 5 minutes.
  4. Stir in the coconut milk, coconut sugar, and salt. Mix well and let it simmer for an additional 5-10 minutes until the mixture thickens slightly.
  5. Remove from heat and let it cool slightly before serving. You can enjoy it warm or chilled.
