Ingredients

  • Glutinous rice flour - 100 grams
  • Mung beans (dried) - 50 grams
  • Coconut milk - 100 ml
  • Sugar - 30 grams
  • Salt - 1/4 teaspoon
  • Water - 150 ml
  • Pandan leaves (optional) - 2 pieces

Steps

  1. Soak the mung beans in water for at least 4 hours or overnight, then drain.
  2. Steam the soaked mung beans for about 20 minutes until soft, then mash them with 15 grams of sugar and a pinch of salt until smooth.
  3. In a bowl, combine glutinous rice flour, remaining sugar, salt, and water. Mix well until a smooth batter forms.
  4. Prepare a steamer and line the steaming tray with banana leaves or parchment paper.
  5. Pour a thin layer of the batter into the lined tray and steam for 5 minutes.
  6. Add a layer of the mung bean paste on top of the steamed batter, then cover with another layer of the rice batter.
  7. Steam for an additional 25-30 minutes until fully cooked through.
  8. Once done, let it cool for a few minutes, then slice into squares or rectangles.
  9. Serve warm or at room temperature, drizzled with coconut milk if desired.
