Ingredients
- Glutinous rice flour - 100 grams
- Mung beans (dried) - 50 grams
- Coconut milk - 100 ml
- Sugar - 30 grams
- Salt - 1/4 teaspoon
- Water - 150 ml
- Pandan leaves (optional) - 2 pieces
Steps
- Soak the mung beans in water for at least 4 hours or overnight, then drain.
- Steam the soaked mung beans for about 20 minutes until soft, then mash them with 15 grams of sugar and a pinch of salt until smooth.
- In a bowl, combine glutinous rice flour, remaining sugar, salt, and water. Mix well until a smooth batter forms.
- Prepare a steamer and line the steaming tray with banana leaves or parchment paper.
- Pour a thin layer of the batter into the lined tray and steam for 5 minutes.
- Add a layer of the mung bean paste on top of the steamed batter, then cover with another layer of the rice batter.
- Steam for an additional 25-30 minutes until fully cooked through.
- Once done, let it cool for a few minutes, then slice into squares or rectangles.
- Serve warm or at room temperature, drizzled with coconut milk if desired.
