Ingredients

  • Pandan leaves - 2
  • Rice flour - 50 grams
  • Tapioca starch - 25 grams
  • Water - 150 ml
  • Coconut milk - 200 ml
  • Maple syrup or coconut sugar - 30 grams
  • Red beans (cooked) - 50 grams
  • Vanilla protein powder - 30 grams
  • Salt - a pinch

Steps

  1. In a pot, combine 150 ml of water with 2 pandan leaves and bring to a boil. Remove the pandan leaves after boiling.
  2. In a mixing bowl, combine the rice flour, tapioca starch, and a pinch of salt. Gradually pour in the pandan-infused water while stirring until a smooth batter forms.
  3. Bring a pot of water to a boil. Using a piping bag or a ziplock bag with the corner cut off, squeeze the batter into the boiling water in long strips to form the noodles.
  4. Cook the noodles for about 2-3 minutes until they float to the surface. Remove them and transfer to a bowl of cold water to prevent sticking.
  5. In a saucepan, combine coconut milk, maple syrup or coconut sugar, and vanilla protein powder. Heat gently while stirring until well mixed. Do not boil.
  6. To serve, place a portion of the chewy noodles in a bowl, add red beans, and pour the warm coconut milk mixture over the top.
