- Pandan leaves - 2
- Rice flour - 50 grams
- Tapioca starch - 25 grams
- Water - 150 ml
- Coconut milk - 200 ml
- Maple syrup or coconut sugar - 30 grams
- Red beans (cooked) - 50 grams
- Vanilla protein powder - 30 grams
- Salt - a pinch
Steps
- In a pot, combine 150 ml of water with 2 pandan leaves and bring to a boil. Remove the pandan leaves after boiling.
- In a mixing bowl, combine the rice flour, tapioca starch, and a pinch of salt. Gradually pour in the pandan-infused water while stirring until a smooth batter forms.
- Bring a pot of water to a boil. Using a piping bag or a ziplock bag with the corner cut off, squeeze the batter into the boiling water in long strips to form the noodles.
- Cook the noodles for about 2-3 minutes until they float to the surface. Remove them and transfer to a bowl of cold water to prevent sticking.
- In a saucepan, combine coconut milk, maple syrup or coconut sugar, and vanilla protein powder. Heat gently while stirring until well mixed. Do not boil.
- To serve, place a portion of the chewy noodles in a bowl, add red beans, and pour the warm coconut milk mixture over the top.
