Ingredients
- Tapioca flour - 100 grams
- Warm water - 120 ml
- Mung beans (dried) - 50 grams
- Sugar - 30 grams
- Coconut milk - 100 ml
- Salt - a pinch
- Vegetable oil - 1 tablespoon
- Pandan leaves - 1-2 for flavor (optional)
Steps
- Soak mung beans in water for at least 2 hours or overnight. Drain and steam for about 20 minutes until soft.
- In a mixing bowl, combine tapioca flour and warm water. Knead until you form a smooth, pliable dough.
- Divide the dough into small pieces (about 20 grams each). Flatten each piece into a disc and place a small spoonful of steamed mung beans in the center. Fold the dough over and seal the edges to form a dumpling.
- Bring a pot of water to a boil. Gently drop the dumplings into the boiling water and cook until they float to the top (about 5-7 minutes). Remove and set aside.
- In a saucepan, combine coconut milk, sugar, a pinch of salt, and pandan leaves (if using). Heat until the sugar dissolves, then remove from heat.
- To serve, place the dumplings in a bowl and pour the coconut sauce over them. Enjoy warm or at room temperature.
