  • Coconut milk - 150 ml
  • Salt - a pinch
  • Pandan leaves - 2, tied in a knot (optional)

Steps

  1. In a bowl, mix the rice flour, tapioca starch, and a pinch of salt. Gradually add water while stirring until you achieve a smooth batter.
  2. Pour the batter into a lightly greased steaming tray or a shallow dish, spreading it evenly.
  3. Steam the tray over boiling water for about 20 minutes until the mixture is set and firm.
  4. Once cooled, cut the steamed mixture into small squares or rectangles.
  5. In a saucepan, combine coconut milk, sugar, and the pandan leaves. Heat gently until the sugar dissolves and the mixture is warm; do not boil.
  6. Remove the pandan leaves and pour the sweetened coconut milk over the rice flour cakes.
  7. Serve warm or chilled, garnished with a sprinkle of toasted sesame seeds or fresh fruit if desired.
