- Pandan leaves - 2 (tied into a knot)
- Salt - 1/4 teaspoon
- Water - 500 ml
- Tapioca pearls - 50 grams
- Ice cubes - as needed
Steps
- Rinse the mung beans under cold water, then soak them in water for at least 2 hours or overnight.
- In a pot, bring 500 ml of water to a boil and add the soaked mung beans. Cook for about 20 minutes until they are soft.
- Meanwhile, in another pot, bring 200 ml of coconut milk to a gentle simmer with the sugar, salt, and pandan leaves. Stir until the sugar dissolves.
- Once the mung beans are cooked, drain any excess water and add them to the coconut milk mixture. Simmer for an additional 5-10 minutes, stirring gently.
- In a separate pot, cook the tapioca pearls in boiling water according to package instructions until they become translucent, about 10-15 minutes. Drain and rinse under cold water.
- To serve, place a portion of the mung bean mixture into a bowl, add a scoop of tapioca pearls, and top with ice cubes if desired. Drizzle with extra coconut milk for added richness.
