- Pomelo - 200 grams, segmented and peeled
- Mung beans - 50 grams, dried
- Coconut milk - 100 milliliters, unsweetened
- Erythritol - 2 tablespoons (or to taste)
- Salt - a pinch
- Water - 500 milliliters
- Vanilla extract - 1 teaspoon
Steps
- Rinse the mung beans under cold water and soak them in water for at least 2 hours or overnight.
- After soaking, drain the mung beans and steam them for about 15-20 minutes until they are soft.
- In a saucepan, bring 500 milliliters of water to a boil. Add a pinch of salt and the steamed mung beans, cooking for an additional 5 minutes.
- Add the erythritol to the saucepan and stir until dissolved. Then add the coconut milk and bring to a gentle simmer for 5 minutes, stirring occasionally.
- Remove the saucepan from the heat and add the vanilla extract, stirring well.
- In serving bowls, layer the cooked mung bean mixture with the pomelo segments. Pour the coconut milk mixture over the top.
- Serve warm or chilled, as preferred.
