Ingredients

  • Pomelo - 200 grams, segmented and peeled
  • Mung beans - 50 grams, dried
  • Coconut milk - 100 milliliters, unsweetened
  • Erythritol - 2 tablespoons (or to taste)
  • Salt - a pinch
  • Water - 500 milliliters
  • Vanilla extract - 1 teaspoon

Steps

  1. Rinse the mung beans under cold water and soak them in water for at least 2 hours or overnight.
  2. After soaking, drain the mung beans and steam them for about 15-20 minutes until they are soft.
  3. In a saucepan, bring 500 milliliters of water to a boil. Add a pinch of salt and the steamed mung beans, cooking for an additional 5 minutes.
  4. Add the erythritol to the saucepan and stir until dissolved. Then add the coconut milk and bring to a gentle simmer for 5 minutes, stirring occasionally.
  5. Remove the saucepan from the heat and add the vanilla extract, stirring well.
  6. In serving bowls, layer the cooked mung bean mixture with the pomelo segments. Pour the coconut milk mixture over the top.
  7. Serve warm or chilled, as preferred.
