- Grapefruit - 200 grams (peeled and segmented)
- Mung beans (dried) - 50 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Salt - a pinch
- Water - 500 ml
- Tapioca pearls - 30 grams
- Vanilla extract - 1 teaspoon
Steps
- Rinse the mung beans under cold water and soak them in water for at least 2 hours.
- After soaking, drain the mung beans and cook them in 500 ml of water over medium heat until tender, about 20 minutes. Drain and set aside.
- In the same pot, bring water to a boil and add the tapioca pearls. Cook for about 10-15 minutes or until they are translucent. Stir occasionally to prevent sticking. Drain and rinse under cold water.
- In a small saucepan, combine coconut milk, sugar, salt, and vanilla extract. Heat over low heat until the sugar dissolves. Do not bring to a boil.
- In serving bowls, layer the cooked mung beans, tapioca pearls, and grapefruit segments.
- Pour the warm coconut milk mixture over the layers in each bowl.
- Serve immediately, or chill in the refrigerator for 30 minutes for a cooler dessert.
