Ingredients

  • Grapefruit - 200 grams (peeled and segmented)
  • Mung beans (dried) - 50 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Salt - a pinch
  • Water - 500 ml
  • Tapioca pearls - 30 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. Rinse the mung beans under cold water and soak them in water for at least 2 hours.
  2. After soaking, drain the mung beans and cook them in 500 ml of water over medium heat until tender, about 20 minutes. Drain and set aside.
  3. In the same pot, bring water to a boil and add the tapioca pearls. Cook for about 10-15 minutes or until they are translucent. Stir occasionally to prevent sticking. Drain and rinse under cold water.
  4. In a small saucepan, combine coconut milk, sugar, salt, and vanilla extract. Heat over low heat until the sugar dissolves. Do not bring to a boil.
  5. In serving bowls, layer the cooked mung beans, tapioca pearls, and grapefruit segments.
  6. Pour the warm coconut milk mixture over the layers in each bowl.
  7. Serve immediately, or chill in the refrigerator for 30 minutes for a cooler dessert.
