Ingredients

  • Pomelo rind - 100 grams
  • Mung beans (split, soaked) - 50 grams
  • Coconut milk - 200 ml
  • Sugar - 60 grams
  • Salt - 1/4 teaspoon
  • Water - 500 ml
  • Tapioca pearls - 30 grams
  • Pandan leaves (optional) - 1

Steps

  1. Begin by preparing the pomelo rind: remove the outer skin and white pith, then cut the rind into thin strips.
  2. Blanch the pomelo rind in boiling water for 5 minutes, then drain and rinse under cold water to reduce bitterness.
  3. In a pot, combine the soaked mung beans with 500 ml of water, bring to a boil, then reduce heat and simmer for about 20 minutes until soft.
  4. Add the blanched pomelo rind to the mung beans and cook for an additional 5 minutes.
  5. In a separate pot, cook the tapioca pearls in boiling water until translucent, about 10 minutes. Drain and rinse under cold water.
  6. In the mung bean mixture, stir in the coconut milk, sugar, salt, and pandan leaves if using. Simmer for another 5-10 minutes until everything is well combined.
  7. Remove the pandan leaves and adjust sweetness to taste. Serve the dessert warm or chilled, topping each bowl with cooked tapioca pearls.
