- Coconut milk - 200 ml
- Sugar - 60 grams
- Salt - 1/4 teaspoon
- Water - 500 ml
- Tapioca pearls - 30 grams
- Pandan leaves (optional) - 1
Steps
- Begin by preparing the pomelo rind: remove the outer skin and white pith, then cut the rind into thin strips.
- Blanch the pomelo rind in boiling water for 5 minutes, then drain and rinse under cold water to reduce bitterness.
- In a pot, combine the soaked mung beans with 500 ml of water, bring to a boil, then reduce heat and simmer for about 20 minutes until soft.
- Add the blanched pomelo rind to the mung beans and cook for an additional 5 minutes.
- In a separate pot, cook the tapioca pearls in boiling water until translucent, about 10 minutes. Drain and rinse under cold water.
- In the mung bean mixture, stir in the coconut milk, sugar, salt, and pandan leaves if using. Simmer for another 5-10 minutes until everything is well combined.
- Remove the pandan leaves and adjust sweetness to taste. Serve the dessert warm or chilled, topping each bowl with cooked tapioca pearls.
