Ingredients

  • Black beans - 100 grams
  • Coconut milk - 200 ml
  • Water - 500 ml
  • Sugar - 50 grams
  • Pandan leaves - 2 pieces
  • Salt - a pinch
  • Tapioca pearls - 30 grams

Steps

  1. Soak the black beans in water for at least 4 hours or overnight to soften them.
  2. Drain and rinse the soaked black beans, then add them to a pot with 500 ml of fresh water.
  3. Bring the water to a boil, then reduce the heat and simmer the beans for about 30 minutes or until tender.
  4. In a separate pot, cook the tapioca pearls in boiling water for about 10-15 minutes until they become translucent. Drain and set aside.
  5. Once the black beans are tender, add the coconut milk, sugar, and a pinch of salt to the pot. Stir to combine.
  6. Tie the pandan leaves into a knot and add them to the mixture, allowing it to simmer for an additional 10 minutes for flavor infusion.
  7. Remove the pandan leaves and stir in the cooked tapioca pearls.
  8. Serve warm or chilled in bowls, garnished with additional coconut milk if desired.
