- Maple syrup - 1 tablespoon
- Garlic (minced) - 2 cloves
- Black pepper - 1/2 teaspoon
- Lime juice - 1 tablespoon
- Fresh cilantro - for garnish
- Rice paper wrappers - 4 sheets
- Peanut butter - 2 tablespoons
- Water - 2 tablespoons
Steps
- Press the tofu for about 15 minutes to remove excess water, then cut into cubes.
- Slice the zucchini and bell pepper into strips, and cut the mushrooms in half.
- In a bowl, mix the vegetable oil, soy sauce, maple syrup, minced garlic, and black pepper to create a marinade.
- Add the tofu and vegetables to the marinade, tossing to coat well. Let them marinate for at least 10 minutes.
- Preheat the grill or a grill pan over medium heat.
- Thread the marinated tofu and vegetables onto skewers, alternating them for a colorful presentation.
- Grill the skewers for about 8-10 minutes, turning occasionally until they are nicely charred and cooked through.
- While grilling, mix the peanut butter and water in a small bowl to create a dipping sauce, adding lime juice for tanginess.
- To serve, place the grilled skewers on a plate, garnish with fresh cilantro, and serve with rice paper wrappers and peanut dipping sauce.
