Ingredients

  • Tofu (firm) - 200 grams
  • Zucchini - 1 medium
  • Bell pepper (red or yellow) - 1 medium
  • Mushrooms (shiitake or button) - 100 grams
  • Vegetable oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Maple syrup - 1 tablespoon
  • Garlic (minced) - 2 cloves
  • Black pepper - 1/2 teaspoon
  • Lime juice - 1 tablespoon
  • Fresh cilantro - for garnish
  • Rice paper wrappers - 4 sheets
  • Peanut butter - 2 tablespoons
  • Water - 2 tablespoons

Steps

  1. Press the tofu for about 15 minutes to remove excess water, then cut into cubes.
  2. Slice the zucchini and bell pepper into strips, and cut the mushrooms in half.
  3. In a bowl, mix the vegetable oil, soy sauce, maple syrup, minced garlic, and black pepper to create a marinade.
  4. Add the tofu and vegetables to the marinade, tossing to coat well. Let them marinate for at least 10 minutes.
  5. Preheat the grill or a grill pan over medium heat.
  6. Thread the marinated tofu and vegetables onto skewers, alternating them for a colorful presentation.
  7. Grill the skewers for about 8-10 minutes, turning occasionally until they are nicely charred and cooked through.
  8. While grilling, mix the peanut butter and water in a small bowl to create a dipping sauce, adding lime juice for tanginess.
  9. To serve, place the grilled skewers on a plate, garnish with fresh cilantro, and serve with rice paper wrappers and peanut dipping sauce.
