- Tapioca pearls - 50 grams
- Coconut milk - 200 ml
- Sugar - 50 grams
- Pandan leaves - 2 pieces
- Jelly powder - 10 grams
- Water - 500 ml
- Banana - 1 medium, sliced
- Mango - 1 medium, diced
- Pineapple - 100 grams, diced
- Salt - a pinch
Steps
- Soak the tapioca pearls in water for about 30 minutes, then drain.
- In a pot, bring 500 ml of water to a boil and add the soaked tapioca pearls. Cook until they become translucent, which takes about 10 minutes. Drain and rinse under cold water.
- In another pot, combine coconut milk, sugar, a pinch of salt, and knotted pandan leaves. Heat gently until the sugar dissolves, then remove from heat.
- In a separate bowl, mix the jelly powder with 200 ml of boiling water until fully dissolved. Pour into a mold and let it set in the refrigerator for about 10 minutes.
- Once the jelly is set, cut it into cubes.
- In serving bowls, layer the cooked tapioca pearls, jelly cubes, and assorted fruits (banana, mango, pineapple).
- Drizzle the sweetened coconut milk over the layered fruits and tapioca, and serve chilled.
