Ingredients

  • Tapioca pearls - 50 grams
  • Coconut milk - 200 ml
  • Sugar - 50 grams
  • Pandan leaves - 2 pieces
  • Jelly powder - 10 grams
  • Water - 500 ml
  • Banana - 1 medium, sliced
  • Mango - 1 medium, diced
  • Pineapple - 100 grams, diced
  • Salt - a pinch

Steps

  1. Soak the tapioca pearls in water for about 30 minutes, then drain.
  2. In a pot, bring 500 ml of water to a boil and add the soaked tapioca pearls. Cook until they become translucent, which takes about 10 minutes. Drain and rinse under cold water.
  3. In another pot, combine coconut milk, sugar, a pinch of salt, and knotted pandan leaves. Heat gently until the sugar dissolves, then remove from heat.
  4. In a separate bowl, mix the jelly powder with 200 ml of boiling water until fully dissolved. Pour into a mold and let it set in the refrigerator for about 10 minutes.
  5. Once the jelly is set, cut it into cubes.
  6. In serving bowls, layer the cooked tapioca pearls, jelly cubes, and assorted fruits (banana, mango, pineapple).
  7. Drizzle the sweetened coconut milk over the layered fruits and tapioca, and serve chilled.
