- Rice noodles - 150 grams
- Pork loin, thinly sliced - 100 grams
- Vegetable broth - 500 ml
- Soy sauce - 2 tablespoons
- Fish sauce - 1 tablespoon
- Fresh herbs (Thai basil, mint, cilantro) - 1 cup mixed
- Bean sprouts - 100 grams
- Lime - 1, cut into wedges
- Garlic, minced - 2 cloves
- Green onions, chopped - 2
- Chili pepper, sliced - 1 (optional)
- Olive oil - 1 tablespoon
Steps
- Soak the rice noodles in warm water for about 15 minutes until softened, then drain.
- In a large saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the sliced pork to the pan and cook until browned, about 5-7 minutes.
- Pour in the vegetable broth, soy sauce, and fish sauce. Bring to a simmer.
- Add the soaked noodles to the broth and cook for an additional 3-4 minutes until heated through.
- Stir in the chopped green onions and mix well.
- To serve, place a portion of the noodle and pork mixture in bowls, top with bean sprouts and fresh herbs.
- Garnish with lime wedges and sliced chili pepper, if desired.
