Ingredients

  • Silken tofu - 200 grams
  • Vegetable broth - 500 ml
  • Carrot - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Baby bok choy - 100 grams, chopped
  • Spring onions - 2, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Fresh cilantro - for garnish
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  2. Add the sliced carrots and mushrooms to the pot, cooking for another 3-4 minutes until slightly softened.
  3. Pour in the vegetable broth and bring the mixture to a gentle boil.
  4. Reduce the heat, then gently add the silken tofu, making sure not to break it apart. Simmer for 5 minutes.
  5. Stir in the chopped baby bok choy and soy sauce, and let it cook for an additional 3-4 minutes until the bok choy is tender.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with chopped spring onions and fresh cilantro.
