- Vegetable broth - 500 ml
- Carrot - 1 medium, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Baby bok choy - 100 grams, chopped
- Spring onions - 2, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Fresh cilantro - for garnish
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the sliced carrots and mushrooms to the pot, cooking for another 3-4 minutes until slightly softened.
- Pour in the vegetable broth and bring the mixture to a gentle boil.
- Reduce the heat, then gently add the silken tofu, making sure not to break it apart. Simmer for 5 minutes.
- Stir in the chopped baby bok choy and soy sauce, and let it cook for an additional 3-4 minutes until the bok choy is tender.
- Season with salt and black pepper to taste.
- Serve hot, garnished with chopped spring onions and fresh cilantro.
