  • Vegetable broth - 500 ml
  • Tofu - 100 grams, cubed
  • Garlic - 2 cloves, minced
  • Onion - 1 small, sliced
  • Tomato - 1 medium, diced
  • Vegetable oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lime - 1, juiced
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Heat the vegetable oil in a pot over medium heat and sauté the minced garlic and sliced onion until fragrant.
  2. Add the diced tomato and cook until softened, about 3-4 minutes.
  3. Pour in the vegetable broth and bring it to a boil.
  4. Once boiling, add the cubed tofu and salt, then reduce heat to a simmer.
  5. After 5 minutes, add the rau đay and black pepper, cooking for an additional 5-7 minutes until the vegetables are tender.
  6. Remove from heat and stir in the lime juice and chopped cilantro before serving.
