Ingredients

  • Chicken breast - 200 grams, diced
  • Water - 1 liter
  • Carrot - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Spinach - 100 grams, roughly chopped
  • Fish sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2 stalks, chopped
  • Black pepper - to taste
  • Olive oil - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
  2. Add the diced chicken breast to the pot and cook until the chicken is browned on all sides, approximately 5-6 minutes.
  3. Pour in the water and bring to a boil. Once boiling, reduce the heat to a simmer.
  4. Add the sliced carrots and mushrooms to the pot, cooking for another 10 minutes until the vegetables are tender.
  5. Stir in the fish sauce, black pepper, and chopped spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
  6. Remove from heat and garnish with chopped green onions before serving.
