- Chicken breast - 200 grams, diced
- Water - 1 liter
- Carrot - 1 medium, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Spinach - 100 grams, roughly chopped
- Fish sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2 stalks, chopped
- Black pepper - to taste
- Olive oil - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add the diced chicken breast to the pot and cook until the chicken is browned on all sides, approximately 5-6 minutes.
- Pour in the water and bring to a boil. Once boiling, reduce the heat to a simmer.
- Add the sliced carrots and mushrooms to the pot, cooking for another 10 minutes until the vegetables are tender.
- Stir in the fish sauce, black pepper, and chopped spinach. Cook for an additional 2-3 minutes until the spinach is wilted.
- Remove from heat and garnish with chopped green onions before serving.
