- Shiitake mushrooms - 100 grams
- Vegetable broth - 500 milliliters
- Carrot - 1 medium, sliced
- Daikon radish - 100 grams, julienned
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Green onions - 2 stalks, chopped
- Fresh cilantro - a handful, chopped
- Lime - 1, for serving
- Salt - to taste
- Black pepper - to taste
Steps
- Heat sesame oil in a pot over medium heat and sauté minced garlic and grated ginger until fragrant, about 1-2 minutes.
- Add sliced carrots and daikon radish to the pot, stirring for another 3-4 minutes until they begin to soften.
- Add the oyster and shiitake mushrooms, and cook for an additional 5 minutes until they release their moisture.
- Pour in the vegetable broth and bring the mixture to a gentle boil.
- Stir in the soy sauce, then reduce heat and let it simmer for about 10 minutes.
- Season with salt and black pepper to taste.
- Remove from heat and stir in chopped green onions and cilantro.
- Serve hot, with lime wedges on the side for squeezing over the soup.
