Ingredients

  • Shiitake mushrooms - 100 grams, sliced
  • Chicken broth - 500 ml
  • Coconut oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Fresh cilantro - 2 tablespoons, chopped
  • Fish sauce - 1 tablespoon
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the coconut oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant (about 1 minute).
  2. Add the sliced shiitake mushrooms to the pot and cook for another 3-4 minutes until they soften.
  3. Pour in the chicken broth and bring to a boil. Reduce heat to low and let it simmer for about 10 minutes.
  4. Stir in fish sauce, lime juice, salt, and black pepper. Adjust seasoning to taste.
  5. Remove from heat and add chopped green onions and cilantro just before serving.
