- Shiitake mushrooms - 100 grams, sliced
- Chicken broth - 500 ml
- Coconut oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Fresh cilantro - 2 tablespoons, chopped
- Fish sauce - 1 tablespoon
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the coconut oil over medium heat. Add minced garlic and grated ginger, sauté until fragrant (about 1 minute).
- Add the sliced shiitake mushrooms to the pot and cook for another 3-4 minutes until they soften.
- Pour in the chicken broth and bring to a boil. Reduce heat to low and let it simmer for about 10 minutes.
- Stir in fish sauce, lime juice, salt, and black pepper. Adjust seasoning to taste.
- Remove from heat and add chopped green onions and cilantro just before serving.
