Ingredients

  • Fresh shiitake mushrooms - 150 grams, sliced
  • Fresh enoki mushrooms - 100 grams, trimmed
  • Vegetable broth - 500 ml
  • Carrot - 1 medium, julienned
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Fresh cilantro - a handful, chopped
  • Green onions - 2, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat sesame oil over medium heat and sauté the onion, garlic, and ginger until fragrant, about 2-3 minutes.
  2. Add the sliced shiitake mushrooms and julienned carrot to the pot, stirring occasionally for another 3-4 minutes until the mushrooms begin to soften.
  3. Pour in the vegetable broth and bring to a gentle simmer.
  4. Add the enoki mushrooms and soy sauce to the pot, simmering for an additional 5-7 minutes.
  5. Season the soup with salt and black pepper to taste.
  6. Remove from heat and stir in the lime juice, chopped cilantro, and green onions.
  7. Serve hot, garnished with additional cilantro and lime slices if desired.
