Steps
- In a pot, heat sesame oil over medium heat and sauté the onion, garlic, and ginger until fragrant, about 2-3 minutes.
- Add the sliced shiitake mushrooms and julienned carrot to the pot, stirring occasionally for another 3-4 minutes until the mushrooms begin to soften.
- Pour in the vegetable broth and bring to a gentle simmer.
- Add the enoki mushrooms and soy sauce to the pot, simmering for an additional 5-7 minutes.
- Season the soup with salt and black pepper to taste.
- Remove from heat and stir in the lime juice, chopped cilantro, and green onions.
- Serve hot, garnished with additional cilantro and lime slices if desired.
