Ingredients

  • Mướp (Vietnamese gourd) - 200 grams, sliced
  • Chicken or vegetable broth - 500 ml
  • Fresh shrimp - 100 grams, peeled and deveined
  • Garlic - 2 cloves, minced
  • Onion - 1 small, thinly sliced
  • Fish sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - a handful, chopped
  • Spring onion - 1, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a pot, heat a little oil over medium heat and sauté the minced garlic and sliced onion until fragrant.
  2. Add the shrimp to the pot and cook until they turn pink, about 2-3 minutes.
  3. Pour in the chicken or vegetable broth and bring it to a boil.
  4. Once boiling, add the sliced mướp and reduce the heat to a simmer.
  5. Season the soup with fish sauce, salt, and black pepper, and let it simmer for about 10 minutes until the mướp is tender.
  6. Remove from heat and stir in the chopped cilantro and spring onion.
  7. Serve hot with lime wedges on the side for squeezing over the soup.
