- Mướp (Vietnamese gourd) - 200 grams, sliced
- Chicken or vegetable broth - 500 ml
- Fresh shrimp - 100 grams, peeled and deveined
- Garlic - 2 cloves, minced
- Onion - 1 small, thinly sliced
- Fish sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - a handful, chopped
- Spring onion - 1, chopped
- Lime - 1, cut into wedges
Steps
- In a pot, heat a little oil over medium heat and sauté the minced garlic and sliced onion until fragrant.
- Add the shrimp to the pot and cook until they turn pink, about 2-3 minutes.
- Pour in the chicken or vegetable broth and bring it to a boil.
- Once boiling, add the sliced mướp and reduce the heat to a simmer.
- Season the soup with fish sauce, salt, and black pepper, and let it simmer for about 10 minutes until the mướp is tender.
- Remove from heat and stir in the chopped cilantro and spring onion.
- Serve hot with lime wedges on the side for squeezing over the soup.
