- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Soy sauce (kosher) - 2 tablespoons
- Olive oil - 1 tablespoon
- Fresh cilantro - 10 grams, chopped
- Black pepper - to taste
- Lime - 1, cut into wedges for serving
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the sliced carrot and cubed sweet potatoes to the pot, stirring to combine. Sauté for another 3-4 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for 15-20 minutes, or until the sweet potatoes are tender.
- Stir in the soy sauce and season with black pepper to taste. Cook for an additional 5 minutes.
- Remove from heat and stir in the chopped cilantro. Serve hot with lime wedges on the side.
