Ingredients

  • Cassava (fresh) - 200 grams, peeled and diced
  • Water - 1 liter
  • Vegetable broth - 500 milliliters
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Carrot - 1 medium, sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Spinach - 100 grams, fresh
  • Fish sauce - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Green onions - 2, chopped for garnish
  • Cilantro - a handful, chopped for garnish

Steps

  1. In a large pot, heat a splash of water over medium heat. Add the minced garlic and diced onion, sautéing until they are fragrant and translucent, about 3-4 minutes.
  2. Add the sliced carrot and mushrooms to the pot, cooking for an additional 5 minutes until they soften.
  3. Stir in the diced cassava and pour in the vegetable broth and water. Bring the mixture to a boil.
  4. Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the cassava is tender.
  5. Add the fresh spinach and fish sauce, stirring well. Let it cook for another 2-3 minutes until the spinach is wilted.
  6. Season with black pepper to taste. Remove from heat and serve hot, garnished with chopped green onions and cilantro.
