- Cassava (fresh) - 200 grams, peeled and diced
- Water - 1 liter
- Vegetable broth - 500 milliliters
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Carrot - 1 medium, sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Spinach - 100 grams, fresh
- Fish sauce - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Green onions - 2, chopped for garnish
- Cilantro - a handful, chopped for garnish
Steps
- In a large pot, heat a splash of water over medium heat. Add the minced garlic and diced onion, sautéing until they are fragrant and translucent, about 3-4 minutes.
- Add the sliced carrot and mushrooms to the pot, cooking for an additional 5 minutes until they soften.
- Stir in the diced cassava and pour in the vegetable broth and water. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for about 15 minutes, or until the cassava is tender.
- Add the fresh spinach and fish sauce, stirring well. Let it cook for another 2-3 minutes until the spinach is wilted.
- Season with black pepper to taste. Remove from heat and serve hot, garnished with chopped green onions and cilantro.
