- Firm tofu - 150 grams
- Vegetable broth - 500 ml
- Garlic - 2 cloves
- Onion - 1 medium
- Tomato - 1 medium
- Soy sauce - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh coriander - for garnish
Steps
- Slice the bitter melon in half lengthwise, remove the seeds, and cut it into thin slices.
- Press the firm tofu to remove excess moisture, then cut it into cubes.
- Finely chop the garlic and onion, and dice the tomato.
- In a pot, heat the vegetable oil over medium heat and sauté the garlic and onion until fragrant and translucent.
- Add the diced tomato and cook for another 2-3 minutes until softened.
- Pour in the vegetable broth and bring it to a gentle boil.
- Add the sliced bitter melon and tofu cubes to the pot, then season with soy sauce, salt, and black pepper.
- Reduce the heat and let the soup simmer for about 15 minutes until the bitter melon is tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh coriander.
