Ingredients

  • Bitter melon - 200 grams
  • Firm tofu - 150 grams
  • Vegetable broth - 500 ml
  • Garlic - 2 cloves
  • Onion - 1 medium
  • Tomato - 1 medium
  • Soy sauce - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh coriander - for garnish

Steps

  1. Slice the bitter melon in half lengthwise, remove the seeds, and cut it into thin slices.
  2. Press the firm tofu to remove excess moisture, then cut it into cubes.
  3. Finely chop the garlic and onion, and dice the tomato.
  4. In a pot, heat the vegetable oil over medium heat and sauté the garlic and onion until fragrant and translucent.
  5. Add the diced tomato and cook for another 2-3 minutes until softened.
  6. Pour in the vegetable broth and bring it to a gentle boil.
  7. Add the sliced bitter melon and tofu cubes to the pot, then season with soy sauce, salt, and black pepper.
  8. Reduce the heat and let the soup simmer for about 15 minutes until the bitter melon is tender.
  9. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh coriander.
