Ingredients

  • Chicken thighs - 300 grams, skinless and boneless
  • Water - 1 liter
  • Onion - 1 medium, sliced
  • Ginger - 1 tablespoon, sliced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, sliced
  • Daikon radish - 100 grams, sliced
  • Fish sauce (kosher) - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Green onions - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a large pot, combine the chicken thighs and water. Bring to a boil over medium-high heat.
  2. Once boiling, skim off any foam that forms on the surface, then reduce heat to medium-low.
  3. Add sliced onion, ginger, garlic, carrot, and daikon radish to the pot. Season with fish sauce, salt, and black pepper.
  4. Cover and simmer for about 20 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken from the pot and shred it into bite-sized pieces. Return the shredded chicken to the pot.
  6. Taste and adjust seasoning if necessary. Stir in the chopped cilantro and green onions.
  7. Serve hot with lime wedges on the side for squeezing over the soup.
