Ingredients

  • Water - 1 liter
  • Mustard greens (Cải xanh) - 200 grams, chopped
  • Tofu - 150 grams, cubed
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Garlic - 2 cloves, minced
  • Vegetable broth powder - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Black pepper - 1/4 teaspoon
  • Sesame oil - 1 teaspoon
  • Fresh coriander (cilantro) - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. In a large pot, bring 1 liter of water to a boil.
  2. Add the vegetable broth powder and mix well to dissolve.
  3. Add the cubed tofu and sliced mushrooms to the pot. Cook for 5 minutes.
  4. Stir in the chopped mustard greens and minced garlic. Cook for another 5-7 minutes until the greens are tender.
  5. Season the soup with soy sauce, black pepper, and sesame oil. Stir well.
  6. Remove from heat and add fresh coriander and lime juice. Mix gently.
  7. Serve hot in bowls, garnished with additional coriander if desired.
