- Water - 1 liter
- Mustard greens (Cải xanh) - 200 grams, chopped
- Tofu - 150 grams, cubed
- Mushrooms (shiitake or button) - 100 grams, sliced
- Garlic - 2 cloves, minced
- Vegetable broth powder - 1 teaspoon
- Soy sauce - 1 tablespoon
- Black pepper - 1/4 teaspoon
- Sesame oil - 1 teaspoon
- Fresh coriander (cilantro) - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- In a large pot, bring 1 liter of water to a boil.
- Add the vegetable broth powder and mix well to dissolve.
- Add the cubed tofu and sliced mushrooms to the pot. Cook for 5 minutes.
- Stir in the chopped mustard greens and minced garlic. Cook for another 5-7 minutes until the greens are tender.
- Season the soup with soy sauce, black pepper, and sesame oil. Stir well.
- Remove from heat and add fresh coriander and lime juice. Mix gently.
- Serve hot in bowls, garnished with additional coriander if desired.
