- Lime juice - 2 tablespoons

- Onion - 1 small, diced
- Soy sauce - 1 tablespoon
- Vegetable oil - 1 tablespoon

- Black pepper - to taste
- Chili pepper - 1 small, sliced (optional)
Steps
- Heat the vegetable oil in a pot over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
- Add the sliced mushrooms and cook for about 5 minutes until they soften.
- Stir in the diced tomatoes and cook for another 3 minutes until they start to break down.
- Pour in the vegetable broth and bring to a simmer.
- Add the mustard greens, soy sauce, lime juice, salt, and black pepper. Simmer for 10 minutes until the greens are tender.
- If using, add the sliced chili pepper for extra heat and adjust seasoning if necessary.
- Serve hot, garnished with additional lime wedges or herbs if desired.
