  • Vegetable broth - 750 ml
  • Lime juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Soy sauce - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili pepper - 1 small, sliced (optional)

Steps

  1. Heat the vegetable oil in a pot over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
  2. Add the sliced mushrooms and cook for about 5 minutes until they soften.
  3. Stir in the diced tomatoes and cook for another 3 minutes until they start to break down.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the mustard greens, soy sauce, lime juice, salt, and black pepper. Simmer for 10 minutes until the greens are tender.
  6. If using, add the sliced chili pepper for extra heat and adjust seasoning if necessary.
  7. Serve hot, garnished with additional lime wedges or herbs if desired.
