- Fish sauce - 1 tablespoon (15ml)
- Salt - 1/2 teaspoon (3g)
- Black pepper - 1/4 teaspoon (1g)
Steps
- Preheat the grill or a grill pan over medium heat.
- Cut the eggplants in half lengthwise and score the flesh with a knife in a crosshatch pattern.
- Brush the cut sides of the eggplants with olive oil and season with salt and black pepper.
- Place the eggplants cut side down on the grill and cook for about 10-12 minutes until the skin is charred and the flesh is soft.
- While the eggplants are grilling, finely chop the scallions and mix them with the minced garlic, remaining olive oil, and fish sauce in a small bowl.
- After the eggplants are cooked, remove them from the grill and place them on a serving platter.
- Spoon the scallion oil mixture generously over the grilled eggplants and serve warm.
